That's when we also asked her for her secret recipe, and she shared some of her expert tips with us.

You must be aware of the chiffon cake and the style in which it is prepared, right? We are going to follow that process only. So, basically, the egg white and the egg yolk will be beaten and whisked separately. The egg white will give rise to meringue, which shall be folded around the egg yolk batter exactly as it is done with a chiffon cake. This is the technique she shared with us, and now you know the secret to making an easy Indonesian dessert recipe.

As long as you are accomplishing this step correctly, you do not need to use any kind of baking soda or baking powder as the leavening agent.

This is how most of the Indonesian marble cake, which is also known as the bolu macan or the tiger cake.

There is another thing that you need to know about recipes. You have to use a lot of butter for this recipe, but since butter is quite expensive, sometimes in Indonesia, they use a combination of butter and margarine instead.

Usually, to create the marble look, you should not use just cocoa powder for the chocolate portion but include some chocolate paste as well.

Begin with preheating the oven first. This is done at 170°C followed by greasing the pan in which you will be baking the cake. Use a mixture of flour, butter, and oil to grease the surface of the marble cake pan.

In the next step, you need to make a meringue by beating the egg whites rapidly. Lemon juice and Caster sugar are poured to create a foamy consistency. Once you observe the transparent peak, place it inside the refrigerator to cool down for a while.

In the meantime, you can beat the butter with the egg yolk. First, beat the butter, then add sugar, Condensed milk, and egg yolk and use an electric mixture to ease your job.

Then add flour gently, little by little, until a thick and smooth batter is formed. By now, the meringue should be cold, so pour it gently into the egg yolk and flour batter. Fold with the help of a spatula.

Take about one-third of the batter and use it to make the chocolate marble effect. Add some chocolate powder and chocolate paste and blend well.

Bake uncovered for thirty minutes, and then cover with a foil sheet and bake for another sixty minutes. Allow the cake to cool down and then serve your delicious Indonesian Marble cake for breakfast, snacks for teatime or even dessert.
